The big, fat pigs with the black hooves that are known as pata negra have special genes that make their meat fattier and sweeter than any other. The big, heavy pigs are raised in Zafra, Extremadura. The pigs are free to roam and get along with everything around them; they are an important part of the ecosystem. Pigs that eat about 9 kg of acorns every day gain more than 90 kg of fat in three months, reaching a total weight of 180 kg. Afterwards, the ham goes through a traditional curing and salting process that is closely watched. The end result is an oily, sweet, and unlike any other ham. You can find rare treats like ibérico lomo (cured pork tenderloin), chorizo ibérico and paleta ibérica (cured pork shoulder). Castelletto also stocks pre-sliced packages of 5J jamón ibérico bellota cured for an incredible 60 months!
