Each serving has 265 calories, 10 grams of carbs, 7 grams of fat, and 38 grams of protein. It can be made in less than 30 minutes.

There are still a lot of calories left over for tasty rice bowls, but we’ll get to those in a moment. For now, let’s take a look at everything you’ll need to make the turkey and vegetables. You can go straight to the printable recipe card at the end of this post if you need to.

Healthy Teriyaki Ground Turkey Stir FryYield:

Extra lean teriyaki ground turkey with broccoli, mushrooms, carrots, zucchini, and a healthy yum yum sauce.

  • 2 Tablespoons Olive Oil, divided
  • 2 pounds Ground Turkey
  • 8 oz Broccoli Florets, cut into bite size pieces
  • 8 oz Sliced Mushrooms
  • 3 Carrots, peeled and medium diced
  • 1 large Zucchini, chopped
  • 2 cups Teriyaki Sauce*
  • Scallions and Toasted Sesame Seeds, for garnish
  • Put 1 1/2 tablespoons of olive oil in a large skillet and heat it over medium-high heat. When the oil is hot, add the vegetables and cook for 5 to 6 minutes, until the broccoli is bright green and the carrots are a little soft. Transfer to a bowl and set aside.
  • Put the ground turkey in the pan after adding the rest of the olive oil. Brown one side for four to five minutes, then break it up and cook it all the way through.
  • Add the vegetables and teriaki sauce to the pan after the ground turkey is done cooking. Add everything to the pan and stir it around. Cook for two to three minutes, or until the sauce is hot and covers the turkey and vegetables evenly.
  • You can put it on rice and top it with toasted sesame seeds, thinly sliced scallions, and low-calorie yum yum sauce (see notes**).

*I used G Hughes, but Kevin’s paleo teriyaki sauce has a better list of ingredients (though it has more calories than G Hughes).

**1/2 cup of light mayo, 3 tablespoons of Sriracha, 2 tablespoons of honey, 2 tablespoons of rice vinegar, and 1 teaspoon of garlic powder can be used to make a lower-calorie yum yum sauce.

The nutrition info was calculated with 99% lean ground turkey. Each serving of 93/7 ground turkey has 295 calories, 33 grams of protein, 10 grams of carbs, 3 grams of fiber, and 15 grams of fat.

Making Teriyaki Ground Turkey Rice Bowls

If you’re a Kinda Healthy Recipes regular, you know the low calorie rice blend drill by now. When I want to make a big meal with fewer calories, I like to mix “real” rice like jasmine or basmati rice with riced cauliflower. With the right ratios, you’ll never know the cauliflower is there.

I like to use a 3:2 ratio of rice to cauliflower rice. I might make it 1:1 for this teriyaki ground turkey stir fry and use six cups of rice to go with the six servings of the stir fry.

As for the yummy looking sauce, that is, well, yum yum sauce. A lower calorie spin on yum yum sauce, to be precise. It’s super easy to make and works well with any stir fry or Japanese inspired dish. I’ve included specific amounts in the recipe card that will make plenty. I also want to quickly let you know that I have a recipe for light yum yum sauce that uses Greek yogurt instead of light mayo, in case you’re interested.

I also like a creamy kimchi sauce that comes from putting similar ingredients in a food processor with kimchi. It’s not Japanese, but I really like it. Your gut health will thank you later!.

Other than the rice and sauce, all that’s left is a handful of sliced green onion and toasted sesame seeds or furikake.
