I have made these a few times and only make them right before serving. I think they might not last long because the crackers soak up so much of the bacon grease. I have never had any leftover so cant say how well they keep. You could assemble them earlier in the day but bake them just before serving. If you make them ahead of time, I’m not sure if they will reheat well or not. They don’t have to be hot when you serve them. I usually place mine on a warming tray after I bake them.
