Ingredients Needed
- 2 lbs ground venison
- 1 tablespoon brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder

Step 3: Stuff the Casings
Thread the collagen casings onto the sausage stuffer nozzle. Tie off one end. Stuff the ground venison mixture into the casings, leaving room between links. Twist links into 3-4 inch sticks.
Step 4: Prep for Cooking
Lay the stuffed snack sticks on a wire cooling rack placed on a rimmed baking sheet. You can also place them directly on the baking sheet.

How to Make Venison Snack Sticks:
- Turn on the grill and add hickory to the fire to make it about 250°.
- Mix spices together with brown sugar.
- In a large bowl, mix ground deer meat with cold water.
- Mix spices into ground venison until throughly combined.
- Add mixture to a Meat Grinder & Sausage Stuffer.
- Butcher twine one end of the casing and thread it onto the sausage stuffer. Fill casings, but do not over stuff.
- After filling, tie the other end.
- Place on the grill over indirect heat and cook with the lid off.
- Smoke for 30 minutes or until a digital thermometer reads at least 165° inside the meat.
- Remove from grill and cool slightly.
