Grilling turkey can take your backyard barbecue from basic to gourmet, but it does require some special preparation to get perfectly juicy, flavorful results The key is marinating the turkey before tossing it on the grill A good marinade infuses the lean meat with extra flavor and moisture, helping prevent it from drying out over the hot fire.
With the right marinade and grilling technique, you can enjoy tender, succulent grilled turkey bursting with herb, spice, and other flavors. Follow this guide to learn all about marinating turkey for the grill
Why Bother Marinating Turkey for Grilling?
Marinating provides several important benefits when grilling turkey:
-
Moisture – Marinades contain acidic ingredients like lemon juice or vinegar that help break down tough muscle fibers in the turkey to make it more tender. Oil in the marinade bastes the meat to keep it juicy and prevent drying out.
-
Flavor – Herbs spices, garlic onions, and other seasonings in marinades impart lots of extra flavor to mildly flavored turkey meat.
-
Browning – Sugars and oils promote nice caramelization and charring on the grill for better flavor.
-
Tenderness – Acids tenderize the meat for a nicer texture.
So take the time to marinate turkey before grilling for the very best results!
Choosing the Best Turkey Cuts for Grilling
For easier handling on the grill, opt for boneless turkey breast halves, turkey breast fillets, or turkey tenderloins rather than wrestling with a large whole turkey. Other great options include:
- Turkey cutlets or steaks
- Ground turkey patties or burgers
- Turkey kebabs or skewers
You can also grill bone-in turkey parts like drumsticks, thighs, or wings. Go for skinless cuts to reduce fat and calories. Avoid bony cuts like a whole turkey or bone-in breast, which are harder to maneuver on the grill.
Picking a Flavorful Marinade for Turkey
The possibilities are endless when it comes to marinade flavors. Consider using ingredients like:
- Fresh herbs – Rosemary, thyme, sage, oregano, basil, cilantro all add flavor. Avoid dried herbs as they can burn.
- Spices and aromatics – Garlic, onion, paprika, cumin, chili powder, ginger, pepper
- Acids – Lemon, lime, vinegar, wine tenderize the meat
- Oil – Olive, vegetable, nut oils add moisture
- Sweeteners – Honey, brown sugar, maple syrup for enhanced browning
You can also use premade marinades like teriyaki sauce, salad dressings, barbecue sauce, or commercial mixes. Get creative with global flavors!
How Long to Marinate Turkey for Grilling
For best results, marinate the turkey in the refrigerator for 2-8 hours. Overnight is ideal, as this gives the flavors time to soak deep into the meat. If short on time, you can get away with 30 minutes to 1 hour. But don’t skip marinating altogether.
Turkey Marinade Ingredients
A basic marinade contains 3 key components:
- Acid – Lemon juice, lime juice, vinegar
- Fat – Olive oil, vegetable oil, sesame oil
- Seasonings – Herbs, spices, garlic, shallots
Follow this formula:
- 1/4 cup acid
- 1/4 cup oil
- 2-3 teaspoons dried herbs or 2 Tbsp fresh herbs
- 1-2 cloves minced garlic
- Salt and pepper
Double the amounts for extra flavor punch. Customize with your favorite ingredients!
Step-by-Step Instructions for Making Turkey Marinade
Making marinade is simple:
- Whisk together the acid, oil, and wet ingredients like juice, honey, etc.
- Add dry spices, herbs, garlic, salt, and pepper and whisk again to blend.
- Taste and adjust seasoning as desired. It should taste bold.
- Place turkey in a shallow dish and pour marinade over top, turning to coat.
- Seal and refrigerate for 2-8 hours, flipping occasionally.
Tips for Applying Marinade to Turkey
To evenly coat the turkey:
- Place in a shallow dish and pour marinade over top. Turn to coat.
- Put in a large zip-top bag, seal, and gently massage marinade all over.
- Use a pastry brush to brush marinade over all sides.
Make sure turkey is fully submerged or coated during marinating.
Grilling Tips for Perfectly Cooked Marinated Turkey
Follow these tips when grilling marinated turkey:
- Use a clean plate when removing turkey from marinade to avoid contamination. Discard used marinade.
- Grill over direct medium heat, turning once halfway through. Avoid flaming.
- Brush with reserved marinade to keep moist. Grill until done, about 6-8 minutes per side.
- Let rest 5 minutes before slicing to allow juices to redistribute.
- Check internal temperature with a meat thermometer. Turkey should reach 165°F.
- Watch closely to prevent charring or overcooking leading to dry meat. Adjust heat as needed.

- Step 1 In blender, place all marinade ingredients. Cover and blend until smooth. If turkey has plastic leg holder, remove and discard before grilling. Inject marinade into turkey, following the directions that came with the injector. (Or pour marinade over turkey on large tray with 1-inch sides or in large glass dish.)
- Step 2 Sprinkle Cajun seasoning inside cavity and over outside of turkey. Fasten neck skin to back of turkey with skewer. Fold wings across back of turkey so tips are touching. Tuck legs under band of skin at tail. Place turkey on large tray with 1-inch sides or in large glass dish. Cover and refrigerate 8 hours but no longer than 24 hours.
- Step 3 If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
- Step 4 Insert digital oven-cord thermometer in turkey so tip is in thickest part of inside thigh muscle and does not touch bone.
- Step 5 Place turkey, breast side up, over drip pan or over unheated side of gas grill. Cover and grill over medium heat 3 to 4 hours or until thermometer reads 1865°F and drumsticks move easily when lifted or twisted. Let stand 15 minutes before carving.
