Gather the Necessary Ingredients and Supplies
Here’s what you’ll need to make a batch of chocolate strawberry turkeys
-
Fresh strawberries – Make sure they are ripe but still firm. You’ll need about 1 pound of strawberries.
-
Milk chocolate and white chocolate – You can use chocolate chips or bars. 12 ounces of milk chocolate and 4 ounces of white chocolate is ideal.
-
Pretzel sticks – Look for thin pretzel sticks, You’ll need about 16 sticks,
-
Mini marshmallows – Standard size mini marshmallows work best. You’ll need around 24.
-
Toothpicks or skewers – For dipping the strawberries into the chocolate.
-
Wax paper or parchment paper – To place the dipped strawberries on to set.
-
Microwave-safe bowls – For melting the chocolate.
-
Spatula – For stirring the chocolate.
-
Scissors – To trim the pretzels and marshmallows.
Prep the Ingredients
First up, wash and pat dry your strawberries. Remove any leaves or stems. Place them on a paper towel lined plate or baking sheet, then pop them in the fridge for about 10 minutes. Getting them cold helps the chocolate adhere better later on.
While the strawberries chill, break your pretzel sticks in half. You’ll want them to be about 3-4 inches long. Next, cut your mini marshmallows in half lengthwise. The inside of the marshmallow will be sticky.
Grab your milk chocolate and chop it into smaller pieces so it melts evenly. You can use chocolate chips or break up a bar into pieces.
Make the Marshmallow Legs and Wings
Now it’s time to assemble the legs and wings! Take your pretzel stick halves and stick a halved marshmallow onto the top, sticky side down. It should adhere easily. Use a pair of kitchen scissors to trim the marshmallow into an oval shape.
Repeat this so you have marshmallow “legs” for each strawberry turkey. You’ll need two per turkey, so make 24 legs total.
For the wings, simply cut one marshmallow diagonally in half. You’ll attach these in the next step.
Attach the Legs and Wings to the Strawberries
Remove your chilled strawberries from the fridge. Insert a toothpick or wooden skewer into the top for easy handling.
Melt your milk chocolate in the microwave, stirring every 30 seconds until smooth.
Now dip the top of each pretzel “leg” into the melted chocolate. Quickly stick one leg on each side of the strawberry near the bottom, holding it for a few seconds.
Next, dip the cut side of the marshmallow wing pieces in chocolate and attach them near the top of the strawberry.
Let the legs and wings set for about 5 minutes. Transfer the strawberries to a wax paper lined baking sheet.
Dip the Assembled Strawberries in Chocolate
Once the legs and wings are hardened, it’s time to dip! Holding each strawberry by the toothpick or skewer, submerge it in the melted milk chocolate. Turn to evenly coat then let any excess drip off.
Angle the toothpick so you can rest the chocolate-covered strawberry on the wax paper. Repeat with each strawberry.
Place the baking sheet in the fridge for about 10 minutes so the chocolate shells can fully harden.
Add White Chocolate Feet
Finally, it’s time for the feet! Melt your white chocolate in the microwave until smooth.
When the chocolate covered strawberries have firmed up, gently dip just the ends of the pretzel legs in white chocolate to form the feet. Let set once more in the fridge or at room temperature.

What ingredients you need to make Chocolate Covered Strawberry Turkeys:
- Large strawberries – I don’t recommend using frozen strawberries. For these, please use fresh strawberries. The ones with the pointier ends work best in terms of shape.
- Not big marshmallows, please; the small ones will work just fine.
- Pickle sticks—I used gluten-free pickle sticks, but any kind will do.
- You can use milk chocolate or semisweet chocolate chips instead of dark chocolate chips.
- White chocolate chips—you don’t have to put them on the tips of the legs, but I love how they look.
How to make strawberry turkeys:
- Rinse and pat the strawberries dry and set aside
- Use bamboo or popsicle sticks to poke holes in the top of the strawberries.
- If you don’t, the pretzel sticks will be too long. Cut off about 1/4 of the top of two of them.
- Melt the chocolate chips in the microwave or on the stove. Then, dip one side of the marshmallow into the chocolate and press it onto each side of the strawberry. Hold for 10 to 15 seconds.
- Do this with the rest of the strawberries and put them in the fridge to set (do not skip this step).
- Dip the strawberries in melted chocolate and shake off the extra chocolate once the legs are set.
- Place on parchment paper and repeat for remaining “turkeys”
- Put it in the fridge for 10 minutes to set, then melt the white chocolate.
- The tips of the legs should be dipped in white chocolate. Put the chocolate back in the fridge to harden, and then enjoy!
