Benefits of Cooking Pork Burgers in the Oven
Oven-baking offers countless advantages for cooking pork burgers
-
Even heating surrounds the burgers, preventing overcooking on the outside while the inside finishes cooking. No more hockey pucks!
-
The indirect heat gently coaxes out moisture and fat from the pork, keeping burgers tender and succulent.
-
Without the need to constantly watch and flip on the stovetop, you can focus on prepping tasty toppings and sides.
-
No splattering grease to deal with! Baking contains messes for an easy clean-up.
-
For parties or meal prep, you can easily bake up a batch of burgers at once.
Choosing the Right Pork for Your Burgers
While ground beef may be the standard burger base, don’t overlook the wonders of ground pork. Pork offers a milder flavor and tender texture when made into burgers.
Opt for a fattier grind with an 80/20 or 75/25 ratio of lean meat to fat. The extra fat keeps pork burgers moist while adding rich flavor. Go too lean, and you risk dry, dense hockey pucks.
For added moisture and binding, mix in a bit of ground veal or ground beef. This boosts the juiciness factor.
Seasoning Your Pork Burgers
While pork provides subtler flavors, it also benefits immensely from seasoning and spice mixes. Consider these tasty additions when mixing up your pork burger meat:
-
Onion powder, garlic powder, paprika, salt, and pepper form a basic savory seasoning blend. Adjust amounts to your taste.
-
Italian sausage seasoning mixes add a signature zing.
-
Chili powder, cumin, and crushed red pepper flakes bring on some heat.
-
Fresh herbs like chopped rosemary, sage, and thyme offer earthy aromatics.
-
Worcestershire and soy sauces enhance umami flavors.
-
For Asian flair, mix in ginger, five spice powder, sesame oil, and a touch of brown sugar.
Thoroughly mix seasonings into the pork until well combined but be gentle to avoid overworking the meat. For convenience, form patties ahead of time and refrigerate until ready to bake.
Baking to Perfection: Tips and Techniques
Preheating your oven to 375°F provides the ideal baking environment for pork burgers. Arrange patties on a foil or parchment-lined baking sheet for easy cleanup.
For food safety, pork burgers should reach an internal temperature of 145°F, so bake for 20-25 minutes depending on thickness. Flipping halfway through prevents the tops from overbrowning.
If adding cheese for the last few minutes, remove burgers when the interior hits 140°F and tops with cheese to melt while residual heat finishes cooking them.
Let burgers rest 5 minutes before serving to allow juices to redistribute. The internal temp will continue rising as they rest.
Mix Up Your Toppings
Don’t limit yourself to just lettuce and tomato. Pork burgers pair beautifully with creative toppings that enhance their flavors. Consider these tasty options:
-
Tangy pickled onions, jalapeños, or relish
-
Sweet grilled fruits like pineapple, peach, or mango
-
Savory mushrooms, caramelized onions, roasted garlic
-
Creamy avocado, goat cheese, or chipotle mayo
-
Crunchy slaw, crispy fried onions, roasted sprouts
-
Smoky charred veggies like zucchini, eggplant, or bell peppers
With so many choices, you could enjoy a different pork burger every night of the week!

Making Them Ahead
For busy weeknights or entertaining, bake up a batch of pork burgers ahead of time. Here’s how:
-
Shape patties and place on a parchment lined baking sheet. Freeze until solid, then transfer to a freezer bag.
-
When ready to cook, do not thaw. Bake frozen pork burgers at 375°F for 30-35 minutes until cooked through.
-
Or, bake fully and let cool before wrapping individually and freezing. Reheat wrapped burgers in the oven or microwave as needed.
With the simple oven-baking method, juicy and flavorful pork burgers can be on the table any night of the week. Ditch the grill and stovetop and let your oven work its magic for foolproof burgers everyone will devour.
How many burgers does this recipe make?
Using 1 lb of ground pork, this recipe makes 4 really large burgers, or 6 smaller burgers. As you can see in the pictures, the burgers are really tall if you make 4 burgers. Please note that even though you only used 1 lb of ground pork, the oats and eggs added make the burgers much heavier.
If you’re on a diet or trying to save money on meat, I suggest making 6 patties out of the ground pork mixture instead of 4.

I find it best to reheat these pork burgers in the oven. Just preheat the oven to 350F and reheat for 5-10 minutes. Now is a good time to add a slice of cheese to the burger and let it melt all over the round meat.
I love using my Cuisinart Oven and Air Fryer Combo to reheat food because it doesnt neat to be preheated, so it saves us a few minutes when were hungry and hangry. It also doesnt heat up the whole kitchen which is nice in the summer.
