My hubby came up with these katleti after gathering ideas from his mom. He bakes them after sautéing and they come out juicy and tender.
They go really well together with buckwheat, braised cabbage or any potato dishes. You aren’t really Russian or Ukrainian if you haven’t had kotlety; end of discussion.
Blending Ground Turkey and Pork for Flavorful, Leaner Dishes
It’s always fun for me to try new things when I cook at home, and lately I’ve been mixing ground turkey and ground pork. Why Blend Ground Turkey and Pork?
Here are some of the biggest benefits to mixing these two versatile meats:
-
Leaner – Turkey has less fat and calories than pork or beef. Blending lightens up the dish.
-
Added moisture – The pork keeps things tender and juicy
-
Complex flavor – Turkey is mild while pork is savory. Together they create depth.
-
Cost savings – Ground turkey costs less than pork or beef alone. Stretch your budget.
-
Nutrition – You get a healthy balance of protein, B vitamins, iron, and zinc.
This combo satisfies big appetites with a lighter yet still hearty meat option. The taste and texture complement each other perfectly.
Tips for Balancing Flavor, Texture and Ratios
When mixing ground meats, consider how to optimize the flavor and texture:
-
Use at least 50% turkey for leanness. Up to 50% pork adds moisture and flavor.
-
Season assertively with herbs, spices, garlic, Worcestershire, etc. Turkey needs help to shine.
-
Add breadcrumbs or oats to meatloaf or burgers for tenderness.
-
Fry a small test patty to taste and adjust seasonings as needed.
Don’t be afraid to tweak ratios and spices until you strike the right balance for your preferences.
Cooking Methods to Try
To yield tender, juicy results, opt for moist cooking methods:
-
Pan fry burgers or meatballs, draining excess fat.
-
Simmer in tomato sauce, chili or soup to absorb flavor.
-
Bake meatloaf, casseroles or stuffed peppers.
-
Grill kabobs or patties quickly over medium-high heat.
-
Sauté with aromatics then braise or stew.
Proper cooking helps ensure your meat blend stays succulent and cooks evenly. Use a meat thermometer to confirm doneness.

Ingredients for Russian Katleti:
1/2 cup white bread crumbs (we like Panko bread crumbs) 1 egg 2 tablespoons finely chopped parsley 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/4 teaspoon ground pepper 1 tablespoon mayo Olive oil
How to Make Katleti:
1. Grate 1 onion and chop 2 Tbsp of parsley.
2. In the bowl of a Kitchen Aid mixer, mix together the meat, 1/2 cup of bread crumbs, 1/2 teaspoon of salt, 1/2 teaspoon of garlic powder, 1/4 teaspoon of ground pepper, 1 egg, 1 tablespoon of mayo, onion, and parsley. Mix everything well on a lower speed setting (#3), or combine ingredients by hand if no mixer is available.
3. Form patties using ice cream scoop to make even portions. Makes approx. 20 patties. (don’t try to flatten them once they are on the skillet or juices will seep out).
4. About 4 tablespoons of olive oil should be heated over medium to high heat. Add more oil if needed and cook the patties until they are browned on both sides, about 3 min on per site), flipping twice so they don’t burn. At the same time preheat your oven to 400°F.
5. Remove patties of the skillet and place them in a glass baking dish. Cover dish with foil and bake for 10 minutes.
