Improper storage however, can cause them to spoil quickly. In this article, I’ll go over the best practices for storing dried oysters to keep them fresh and delicious for as long as possible.

Purchase High Quality Dried Oysters

It all starts with buying high quality dried oysters from a reputable source. Inspect the oysters carefully before purchasing. They should look dry and shriveled, with no signs of moisture or stickiness. Give them a sniff – you want a briny, ocean aroma without any “off” odors. Discoloration, soft spots, and a fermented smell means the oysters have spoiled.

Specialty Asian grocery stores offer the best selection of properly dried oysters. I prefer oysters from Japan as they have strict regulations on processing seafood. Expect to pay $30 to $60 per pound for good dried oysters.

Keep Dried Oysters in a Cool, Dry Place

Rehydrate Before Eating

After prolonged storage, dried oysters may become very stiff and shriveled. Before using, soak in warm water for 20-30 minutes to rehydrate. Then rinse well and pat dry. This returns plumpness and makes them easier to slice or dice.
