How Long Can You Keep Corned Beef In The Freezer?

Post date |

I just did a google search and found a thread from here dated 2010. Many said they have successfully frozen corned beef in the package it came in. I purchased 4 last week. My sister was supposed to come visit on Friday, but she didn’t. I had planned to cook extras for her, but she didn’t. I am going to try and freeze 3 of them and cook one tomorrow. I thought I would post this, if anyone else was wondering.

Corned beef is a salt-cured brisket that’s become a staple for holidays like St. Patrick’s Day. Its unique flavor and tender texture make it a delicious pot roast or sandwich filling. Freezing corned beef allows you to buy in bulk when on sale, and enjoy it for months after purchase. But how long does corned beef last in the freezer before losing quality?

Overview of Freezing Corned Beef

Freezing stops bacteria growth and preserves corned beef safety almost indefinitely. However flavor moisture content, and texture do diminish over time in the freezer. Follow proper freezing procedures to maximize corned beef’s freezer shelf life.

Here are some key tips on freezing corned beef:

  • Uncooked corned beef lasts 1-3 months with good quality when frozen. Up to 6 months is possible but quality declines.
  • Cooked corned beef keeps 2-3 months in the freezer before drying out or toughening.
  • Portion into meal sizes in freezer bags or airtight containers. Remove air to prevent freezer burn.
  • Label with contents and freeze-by date. Track for best quality.
  • Maintain temperature at 0°F or below for food safety.
  • Thaw slowly in the refrigerator, not at room temperature.

How Long Does Fresh Corned Beef Last?

Refrigerator life for fresh corned beef depends on the packaging:

  • Vacuum-packed corned beef: 5-7 days past any “sell by” date.
  • No date, in brine pouch: 5-7 days unopened.
  • With a “use by” date: Refrigerate unopened until that date.

Once opened refrigerate corned beef for just 3-5 days. Keep drained wrapped tightly and on the bottom shelf.

Does Corned Beef Freeze Well?

The texture and amount of water in corned beef don’t change much when it’s frozen and stored correctly.

Its high salt content helps prevent freezer burn. The beef fat also retains moisture to keep it tender after thawing.

To freeze corned beef:

  • Drain brine from packaging as salt hastens spoilage. Rinse and pat dry.
  • Double wrap tightly in plastic wrap and foil to exclude air.
  • Portion into meal-size servings in freezer bags or containers.
  • Freeze immediately at 0°F or below.

How Long Can You Freeze Corned Beef?

Frozen uncooked corned beef keeps well for 1-3 months before quality drops noticeably. Up to 6 months is possible, but expect some drying and textural changes.

Cooked corned beef has a shorter freezer life of just 2-3 months. It’s delicate texture doesn’t hold up as well.

Portioning corned beef into smaller packages helps maximize freezer time. Small batches freeze quickly lowering ice crystal damage.

Monitor your freezer temperature. Fluctuations above 0°F shorten shelf life. Use an appliance thermometer.

Tips For Freezing Corned Beef

Follow these guidelines to properly freeze corned beef:

  • Freeze uncooked corned beef within 5-7 days of purchasing for best quality.
  • Rinse brine off and pat dry before freezing. Wrap tightly in plastic and foil.
  • Freeze in meal-size portions in freezer bags or airtight containers.
  • Exclude air and seal tightly to prevent freezer burn and oxidation.
  • Label bags or containers with contents and freeze-by date. Track for best quality.
  • Place flattened packages in single layer against freezer walls until frozen solid.
  • Maintain constant 0°F temperature. Use freezer thermometer to monitor.

Thawing Frozen Corned Beef

Always thaw frozen corned beef gradually in the refrigerator:

  • Place in bowl or on plate to catch drips. Thaw overnight or 24-48 hours.
  • Once thawed, use within 3-5 days. Do not refreeze raw corned beef.
  • Cook thawed corned beef immediately until piping hot, at least 160°F internal temperature.

Never thaw corned beef on the counter or in hot water. This allows rapid bacteria growth in the “danger zone” between 40-140°F.

Cooking Frozen Corned Beef

Frozen corned beef can be cooked from fully frozen state with slightly extended cooking time.

  • There’s no need to thaw first. Cooking time takes 50% longer from frozen.
  • Submerge in liquid when cooking to prevent drying out. Add when cooking other ingredients.
  • Use a meat thermometer. Cook to 160°F internal temperature. Allow resting time.
  • Turn meat frequently and add extra liquid to account for thawed outer layer.

Partially thawing first for 30-60 minutes yields more evenly cooked corned beef. The outer layer thaws enough for better moisture retention.

Freezing Cooked Corned Beef

Leftover cooked corned beef also freezes well:

  • Portion cooked corned beef into meal sizes in freezer containers. Leave headspace.
  • Cool completely before freezing, within 2 hours of cooking.
  • Label bags or containers with contents and freeze-by date.
  • Avoid freezing more than once. Reheat only until steaming hot.

Freeze sliced corned beef for sandwiches. Use within 2 months for best quality.

How Long Is Corned Beef Good For In The Freezer?

Properly stored corned beef stays fresh in the freezer for:

  • Uncooked: 1-3 months for good quality, up to 6 months maximum.
  • Cooked: 2-3 months to retain moisture and texture.

Monitor your freezer temperature at 0°F. Portion into small packages. Wrap tightly to prevent ice crystals. Track freeze-by dates for optimal quality.

With proper freezing and thawing, corned beef can be kept frozen safely for months while preserving its delicious flavor.

Re: Can you freeze corned beef in the package?

Here is info from USDA website:

Corning is a form of curing; it has nothing to do with corn. The name comes from Anglo-Saxon times before refrigeration. In those days, the meat was dry-cured in coarse “corns” of salt. Some of the salt pellets were about the size of corn kernels and were rubbed into the beef to keep it from going bad and to keep it fresh. Some people use brining instead of dry salt to cure meat these days, but the name “corned beef” is still used instead of “brined” or “pickled” beef. Commonly used spices that give corned beef its distinctive flavor are peppercorns and bay leaf. Of course, these spices may vary regionally. Pickled corned beef in a pouch with a “sell-by” date or no date can be kept in the fridge (40 °F or less) for 5 to 7 days if it has not been opened. Products with a “use-by” date can be stored unopened in the refrigerator until that date. Drained and well wrapped, an uncooked corned beef brisket may be frozen for 1 month for best quality. It’s recommended to drain the brine because salt encourages rancidity and texture changes. The flavor and texture will diminish with prolonged freezing, but the product is still safe. To keep it at its best, corned beef should be kept in the fridge for three to four days after cooking and frozen for two to three months. Corned beef is made from cuts of beef that aren’t as tender, like the round, rump, or brisket. Therefore, it requires long, moist cooking. Keep food safety in mind when preparing corned beef. It can be cooked on top of the stove or in the oven, microwave, or slow cooker. Corned beef may still be pink in color after cooking. This does not mean it is not done. Nitrite is used in the curing process. This fixes pigment in the meat and affects the color. Allow the brisket to stand for about 20 minutes after removing from the heat. The best way to cut it is diagonally across the grain of the meat. This will make it easier to slice. The USDA does not recommend one particular cooking method as best. Following are methods from various sources. The cooking times are based on corned beef that is not frozen at the time of cooking. “Fork-tender” is a good indication of doneness, but use a food thermometer to be sure. Use a food thermometer to make sure that all raw corned beef is cooked to at least 145°F inside before taking it off the heat source. For safety and quality, allow meat to rest for at least three minutes before carving or consuming. For reasons of personal preference, consumers may choose to cook meat to higher temperatures.

eta. The “use by” date on the packages are pretty generous. I usually just leave mine in the frig. I think the “use by” date can be a month or more. I made corned beef tonite for my Aunt & Uncle. She said she freezes her corned beef all the time. but I havent tried it .
