The other night for dinner we ate our bacon-wrapped filet mignon steaks which we bought from Omaha Steaks. I cooked them in a cast-iron skillet over medium-high heat for about 6 minutes on one side and 5 minutes on the other. I then cooked the bacon for a couple of minutes on the edges to make sure it was done. An instant-read meat thermometer showed that they were about 130 degrees inside when I took them off the heat. When we cut into them, they were a nice medium rare.
Being filet-mignon meant the steaks were very tender and anything wrapped with bacon is going to be extra-special. We put some butter on each filet because, well, why not? The juicy steaks did not let us down; we were all happy.
After the steaks, we had a spinach salad and homemade fries, which went really well with them. Steak Frites – so good!.
This was the last meal that we cooked from the special order we received from Omaha Steaks. I have to say, these were the best of the bunch, without a doubt.

Cooking filet mignon wrapped in bacon is easy to do at home with some simple steps. Follow this guide for preparing seasoning, searing and roasting Omaha Steaks filets for a restaurant-quality meal.
Ingredients:
- 4 Omaha Steaks 6-8 oz filet mignons
- 8 slices bacon
- Steak seasoning
- Butter
- Fresh thyme and rosemary
Step 1 – Prepare the Filet Mignons
-
Take the filets out of the fridge and let them sit at room temperature for 30 minutes before cooking This helps them cook more evenly.
-
Pat the filets dry thoroughly with paper towels. Make sure they are dry on all sides.
-
Generously season the filets on all sides with your favorite steak rub or seasoning blend. Get the seasoning nicely adhered to the meat.
-
Let them sit for 5-10 minutes after seasoning so the flavors are absorbed.
Step 2 – Wrap With Bacon
-
Lay out bacon slices on a plate. They should be slightly overlapping.
-
Place a filet at one end of a bacon slice and roll it up. Wrap it neatly and tightly.
-
Repeat with remaining filets and bacon. Refrigerate for 30 minutes to an hour to allow flavors to mingle.
Step 3 – Sear the Filets
-
Preheat oven to 400°F. Heat an oven-safe pan over high heat.
-
Add a knob of butter and thyme sprigs. Once butter foams, add filets seam side down.
-
Sear for 2-3 minutes without moving them until nice and browned. Turn and brown the other sides too.
-
Use tongs to hold the filets and sear the ends as well for an all-over brown crust.
-
Tip: Baste them with the melted butter as you sear.
Step 4 – Roast in the Oven
-
Once seared, transfer the pan to the oven and roast for 15-18 minutes until it reaches your desired doneness – 125°F for medium-rare or 135°F for medium.
-
Baste the filets with the butter a few times as they roast.
-
Remove from oven when done and tent foil over the pan. Let rest for 10-15 minutes.
Step 5 – Carve and Serve
-
Snip and remove the bacon rashers. They should be nice and crispy.
-
Slice the bacon-wrapped filet mignon into 1/2-inch thick slices.
-
Fan them out lean side up with the bacon on the ends.
-
Garnish with rosemary sprigs and extra flaky salt.
-
Serve with side of scalloped potatoes or buttered asparagus.
-
Spoon over the roasted garlic herb butter from the pan for added richness.
