Mastering the Art of Grilling Thin Cut Pork Chops

Post date |

Thin pork chops are an idea I learned from from John Willoughby and Chris Schlesinger in Gourmet magazine. They suggest you think thin, crispy and flavorful, instead of the usual thick and juicy. For a quick grill dinner during the week, thin is good. It cooks quickly and makes dinner ready faster.

If you want your lean pork loin to be thin and crispy, don’t cook it too long. If you do, it will dry out. It’s important to cook the chops only on one side. The brine gives them a little cushion. The pork chops are thin enough to cook all the way through, and the side that faces the grill will get a nice brown color. Grilled Thin Pork Chops, Quick Brinerated[feast_advanced_jump_to].

Juicy, flavorful grilled pork chops are a summertime staple. But getting thin cut pork chops right off the grill can be tricky. With less fat and connective tissue thin chops cook lightning fast and are prone to drying out. Luckily with the right prep and techniques, you can achieve tender, moist chops with a nice char every time.

In this complete guide, we’ll cover everything you need to know about grilling thin cut pork chops to crispy, juicy perfection. Let’s dive in!

Why Go Thin? Benefits of Thin Cut Pork Chops

While thick pork chops have their merits, there are several advantages to opting for thin cut chops:

  • Cook faster, ideal for weeknights
  • Pick up more flavor and char from the grill
  • Easy to cook evenly without drying out
  • Versatile for sandwiches, tacos, skewers, etc.
  • Less expensive per serving

Thin chops are cut from the loin section and usually around 1/2 inch thick. Their leanness makes them perfect for soaking up spice rubs and marinades. Plus you can cook up a quick weeknight dinner in about 8-10 minutes.

Grilling Prep for Perfect Thin Chops

Proper prep is key for grilling thin pork chops to juicy perfection. Here are some tips

  • Pat dry – Blot chops with paper towels before seasoning so spices stick better.

  • Trim fat – For thin chops, remove excess outer fat so it doesn’t flare up.

  • Season generously – Coat both sides with salt, pepper and spices. Go bold!

  • Let sit – After seasoning, rest 10-15 minutes for flavors to penetrate.

  • Use a grill basket – Arrange chops in a grill basket to easily flip multiple at once.

How to Grill Thin Pork Chops to Perfection

Once your chops are prepped, it’s go time! Follow these steps:

  • Heat grill to medium-high. For thin chops, no need to go above 400°F.

  • Clean and oil grates. Use a grill brush and oil to prevent sticking.

  • Sear chops 2 minutes per side. Get nice grill marks and char without overcooking.

  • Flip only once. Resist the urge to move them too much which can dry them out.

  • Check temperature. Cook until they reach 145°F for safe, juicy pork.

  • Let rest 5 minutes. This allows juices to redistribute so meat stays moist.

It’s that easy. From grill to plate in about 8 minutes!

Smoke and Spice Ideas

One benefit of quick-cooking thin chops is you can layer on bold flavors. Get creative with spice rubs, marinades and sauces:

  • Smoky – Smoked paprika, chili powder, cumin, garlic
  • Tex-Mex – Ancho chile, cilantro, lime, onion
  • Asian – Ginger, sesame oil, soy sauce, garlic
  • BBQ – Brown sugar, ketchup, Worcestershire, mustard
  • Herb – Rosemary, thyme, oregano, lemon zest

Bring those thin chops to life with mouthwatering flavors!

Handy Grilling Tips and Tricks

Take your pork chop grilling expertise to the next level with these helpful tips:

  • Let chops sit at room temp 15-30 minutes before grilling for more even cooking.

  • Try a “compound butter” by blending herbs, spices, citrus into softened butter and slathering on chops.

  • If chops begin to char too quickly, move them to a cooler part of the grill.

  • Use tongs instead of piercing chops with a fork, which can cause moisture loss.

  • Add a disposable foil pan with water under the grate to add humidity and prevent drying.

Choosing the Right Thickness

While thin pork chops are typically around 1/2 inch, you can find them in a range of thicknesses:

  • 1/4 inch – Very quick cooking but can dry out easily. Best for stir fries.

  • 1/2 inch – The classic thin chop for weeknight grilling.

  • 3/4 inch – A bit more forgiving if you prefer slightly thicker.

  • 1 inch – Borderline thick cut chop. Allows a little more time on grill.

No matter the thickness, monitor temperature and don’t overcook!

  • BBQ Pork Chops – Smoky, sweet, sticky sauce

  • Jamaican Jerk Pork Chops – Spicy and herbaceous

  • Caprese Pork Chops – Fresh mozzarella and tomato

Serving Suggestions and Side Dishes

While pork chops are stellar on their own, they pair beautifully with these sides:

  • Summer corn on the cob – Grill alongside chops

  • Coleslaw – Cool, crunchy cabbage balances richness

  • Baked beans – Smoky, sweet and traditional

  • Roasted potatoes – Crispy spuds catch any pork drippings

  • Greens salad – Fresh contrast to charred chops

Mix and match to create a well-rounded cookout meal.

Cooking Thin Chops on a Skillet or Grill Pan

While the grill may be ideal, you can also cook thin pork chops to juicy perfection indoors:

  • Use a heavy skillet or grill pan to mimic grill marks and flavor.

  • Choose a pan with high sides to prevent splatter. Cast iron works great.

  • Get the pan screaming hot before adding oil and chops.

  • Flip only once during cooking. Resist poking or moving them.

  • Optional step: Finish chops in a 400°F oven for more even cooking, especially for thicker chops.

While you’ll miss out on smoky char, stove-top thin chops can be just as delicious.

Mastering thin cut pork chops off the grill results in a quick weeknight dinner with massive flavor. With the right seasoning, temperature control, and doneness, you’ll achieve tender and juicy chops every time.

Experiment with different spice rubs and sauces to liven up this staple grilling meat. Serve alongside fresh vegetables, potatoes or beans for the perfect summer meal with minimal effort. Once you get the method down, you may never go back to thick chops again!

Grilled Thin Pork Chops, Quick Brinerated. My recipe for thin-cut pork chops, grilled quickly on only one side.

  • 3 pounds of slice-thin pork chops (¼-inch to ½-inch thick, rib chops are best)
  • ¼ cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • To brine the pork chops, mix the brining ingredients in a small bowl with a whisk until everything is well blended. In a large bowl or baking dish, place the pork chops. Set aside 2 tablespoons of the brinerade for later use. Pour the rest of the brinerade over the chops. Flip the pork chops a few times to make sure the marinade covers all sides. Then set them aside while the grill heats up. (You can also put the chops in the fridge and brine them for up to 4 hours, turning them every so often to coat them with the brine.) ).
  • For direct medium heat (350°F to 400°F), heat the grill first. Then, set it up for grilling on direct medium heat. All of the burners on my Weber Summit are set to high for 10 minutes to heat up. Then I clean the grill grates and lower the burners to medium.
  • Cook the chops: Turn the chops over one more time in the baking dish to coat them with the brine. Then, place them directly on the grill over medium-high heat. (Keep the lid closed as much as possible while cooking. Grill the chops for about two minutes, or until the bottom has good grill marks. Then, turn the chops 90 degrees (do not flip them), and grill for another two minutes, or until the bottom has a good crosshatch of grill marks. The chops should be done now; the side that has been facing up will have turned from pink to white. Remove them from the grill. If the chops are thick and the top isn’t done, flip them over and cook for one more minute. ).
  • Add the glaze and serve. Put the chops on a platter and pour the brinerade you saved over them. Let rest for five minutes, then serve.
  • Prep Time: 20 minutes
  • Cook Time: 4 minutes
  • Category: Weeknight Dinner
  • Method: Grilling
  • Cuisine: American
  • Serving Size: 1-2 pork chops
  • Brinerating the chops After 4 minutes, the chops are cooked through – even though theyve never been flipped. Ready to serve

  • For an Asian twist, you can switch out the balsamic vinegar for seasoned Asian rice vinegar and the olive oil for peanut or sesame oil. The soy sauce already gives them a hint of Asian flavor.
  • When the pork chops are done, brush them with barbecue sauce instead of the brinerade that you saved.
  • Dont forget to gnaw on the bones…its my favorite part!

FAQ

How long does it take to grill pork chops on the grill?

Grill the pork chops over direct heat, with the lid closed, until the pork chops are well-marked, for 8-12 minutes total, turning once. How do you keep thin pork chops from drying out on the grill?

As mentioned previously, the biggest culprit behind dried out pork is overcooking. According to Ray Lampe (aka Dr. BBQ), “cook your chops just as you would a steak — 145 for medium rare and 160 for medium and always with a 3 minute rest [to allow the juices to redistribute throughout the meat].

How long to grill thin pork chops at 400?

Temperature in either type of grill should be 375-400 degrees prior to putting on the pork chops. Using your tongs, place loin chops on grill and sear for 2-3 minutes per side. Move pork chops to indirect heat (or reduce to medium), and continue grilling for 4-6 minutes on each side, depending on their thickness.
