- Turn on the grill and add hickory to the fire to make it about 250°.
- Mix spices together with brown sugar.
- In a large bowl, mix ground deer meat with cold water.
- Mix spices into ground venison until throughly combined.

- Butcher twine one end of the casing and thread it onto the sausage stuffer. Fill casings, but do not over stuff.
- After filling, tie the other end.
- Place on the grill over indirect heat and cook with the lid off.
- Smoke for 30 minutes or until a digital thermometer reads at least 165° inside the meat.
- Remove from grill and cool slightly.
- Cut into 4-inch sticks and serve with your favorite mustard.
- To store or put in a Ziploc bag, use a vacuum sealer.
